  • 1 tablespoon white wine vinegar

Preparation:

Step 1: Prepare the Vegetables

Start by washing the cauliflower and cutting it into small florets. Peel and chop the carrots into small pieces. Rinse the frozen peas under cold water to thaw them. Cut the pickles and green apple into small cubes. Set aside.

Step 2: Steam the Cauliflower and Carrots

Fill the Thermomix with 500ml of water. Place the cauliflower florets and chopped carrots into the Varoma dish. Set the Varoma dish on top of the Thermomix. Close the lid and select the Varoma function at 100°C for 15 minutes. After the time is up, remove the Varoma dish and set it aside to cool.

Step 3: Cook the Peas

Empty the water from the Thermomix bowl and rinse it. Place the thawed peas into the Thermomix bowl. Select the Steam function at 100°C for 5 minutes. Once cooked, remove the peas from the Thermomix and set them aside to cool.

Step 4: Prepare the Dressing

In a separate bowl, combine the Greek yogurt, Dijon mustard, white wine vinegar, chopped dill, salt, and pepper. Mix well until all the ingredients are thoroughly combined.

Step 5: Mix the Salad

In a large mixing bowl, combine the steamed cauliflower, carrots, cooked peas, pickles, green apple, and diced chicken breast. Pour the dressing over the salad and toss gently until all the ingredients are coated with the dressing.

Step 6: Chill and Serve

Transfer the cauliflower Russian salad to a serving dish and refrigerate for at least 1 hour to allow the flavors to combine. Serve chilled and enjoy!
