Ingredients:

  • 4 large eggs
  • 150g granulated sugar
  • 150g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 500ml milk
  • 100g unsalted butter
  • 50g cornstarch
  • 100g granulated sugar (for the pudding)
  • 1 lemon zest
  • 1 tablespoon powdered sugar (for dusting)

Preparation:

Step 1: Preheat your Thermomix to 180°C.

Step 2: In the mixing bowl of your Thermomix, add the eggs and granulated sugar. Mix on Speed 4 for 2 minutes until light and fluffy.

Step 3: Add the all-purpose flour and baking powder to the bowl. Mix on Speed 3 for 10 seconds to combine.

Step 4: Add the vanilla extract and mix again on Speed 3 for 5 seconds.

Step 5: Grease a round cake tin with butter and pour the batter into the tin. Place it in the preheated oven for 25 minutes or until the sponge cake is golden and a toothpick inserted in the center comes out clean.

Step 6: While the sponge cake is baking, let’s prepare the pudding. In the Thermomix mixing bowl, add the milk, unsalted butter, cornstarch, granulated sugar, and lemon zest. Cook on Speed 4 at 90°C for 8 minutes or until the mixture thickens into a creamy pudding consistency.

Step 7: Once the sponge cake is done, remove it from the oven and let it cool for a few minutes.

Step 8: Cut the sponge cake into small squares and place them in individual serving dishes.

Step 9: Pour the warm pudding over the sponge cake squares, ensuring they are completely soaked.

Step 10: Allow the Genoese Sponge Cake Pudding to cool to room temperature, then refrigerate for at least 2 hours to set.

Step 11: Before serving, dust the top of each pudding with powdered sugar for an elegant touch.
