Ingredients:
- 6 eggs
- 1 cup sugar
- 1 cup milk
- 4 slices of bread
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Preparation:
1. Prepare the Caramel:
Temperature: 120°C
- Place 1/2 cup of sugar in the Olla GM and add 1/2 cup of water.
- Set the Olla GM to 120°C and let the sugar caramelize until it turns a golden brown color.
- Carefully pour the caramel into a baking dish and swirl to coat the bottom evenly. Set aside to cool.
2. Prepare the Custard Mixture:
Temperature: 100°C
- In a bowl, whisk together 6 eggs, 1 cup of sugar, 1 cup of milk, 1 teaspoon of vanilla extract, and 1 teaspoon of ground cinnamon until well combined.
- Cut the bread into small cubes and add them to the custard mixture. Let the bread soak for a few minutes to absorb the liquid.
- Pour the custard mixture over the cooled caramel in the baking dish.
3. Cook the Pan de Calatrava:
Temperature: 120°C
- Cover the baking dish with aluminum foil to prevent steam from entering.
- Place the baking dish in the Olla GM and cook at 120°C for 20 minutes.
- After 20 minutes, reduce the temperature to 100°C and cook for an additional 10 minutes.
- Once the Pan de Calatrava is set and a toothpick inserted into the center comes out clean, remove it from the Olla GM and let it cool.
4. Serve and Enjoy:
Temperature: Room temperature
- Once the Pan de Calatrava has cooled, run a knife around the edges of the baking dish to loosen the dessert.
- Invert the baking dish onto a serving plate to release the Pan de Calatrava with the caramel on top.
- Slice the Pan de Calatrava into portions and serve at room temperature.
